tests: Fix objcopy --add-symbol arguments creation

Remove unnecessary escape bachslashes from:
addr="$(echo \"$$$$sym_line\" ...
The 'echo' will print output line with double quote characters, which
then will be included in the values passed to --add-symbol. This can
cause errors.
